Before cooking the steak, it’s best to heat the cooking surface well – that is, an oiled pan or barbecue – and ensure that, if it has been frozen, it has been completely defrosted. It should be about 3cm thick. Cook the first side on medium to high heat for two to four minutes, depending on whether you like it rare or medium. Avoid touching the meat during the cooking. Turn the steak and cook the other side for two to four minutes, then season with a little salt and pepper before serving.
